Ingredients
Peanut Sauce
- 3 tablespoons soy sauce
- 3 tablespoons peanut butter
- 2 tablespoons oyster sauce
- 1 ½ tablespoons chili garlic sauce
- 1 tablespoon ground ginger
- 1 tablespoon honey
- 2 tablespoons water
- 1 tablespoon rice vinegar
- Juice of 1 lime
Lettuce Wraps
- 8 Boneless Skinless Chicken Thighs cut into 1-inch chunks
- 2 tablespoons olive oil
- 4 green onions sliced
- ½ cup shredded carrots
- ½ cup chopped peanuts
- ½ cup chopped cilantro + extra for garnish
- 12 baby butter lettuce leaves
- 6 lime wedges
Instructions
To make the Peanut Sauce:
Stir all ingredients in a bowl. Use ⅓ cup of it for marinating and set the rest aside.
To make the chicken:
1. Place the cut chicken in a small bowl and ⅓ cup peanut sauce. Stir well to coat. Cover and refrigerate for 30 minutes-2 hours.
2. Heat oil in large skillet over medium heat and add marinated chicken. Sauté for 5-7 minutes, stirring to turn the chicken pieces.
3. Add carrots and green onions and cook for an additional 5 minutes or until chicken iscooked through. Add peanuts and cilantro and remove from heat.
To serve:
Spoon into lettuce cups and serve immediately with extra peanut sauce, lime wedges and cilantro.

So good!!! The sauce is everything. Used what I had in the house which was chicken breasts, cashews instead of peanuts. I also only used 3/4 Tbsp of Chili sauce (don’t like a lot of heat) and added red & yellow peppers and edamame. Mmmmmm…I admit I ate more than my share LOL. I also didn’t have time to marinate as this was a last minute choice, but still delicious.Reply
