DJKANTE716: I wrap the prosciutto around the breast & secure with a bold toothpick. Then remove the toothpick prior to serving. I also add 1/3 cup of dry white wine to the sauce which cuts some of the lemony taste down. I generally make the sauce "to taste" rather than by measure, adding the lemon juice little by little one tablespoon at a time-then tasting and seasoning. I also add a chopped sage leaf to the oil/butter mixture prior to making the sauce. That may be to "sagey" for some but it makes an outstanding sauce.

So good!! The only change I made was wrapping the sage leaves and the whole chicken cutlet in a LARGE slice of Boar's Head prosciutto. The flavor and juiciness of the chicken is fantastic. The leftovers were delicious served cold.

Will keep in our weekday rotation. Will try again with cutlets instead of breasts (what was on hand but take a lot longer even cubing breasts) and will try 2.5 - 3 TBSP fresh lemon juice (halving the lemon juice and the flavor is nearly absent which might be ok for those not huge fans of lemon)

This was *AMAZING*! I bought big chicken breasts, cut them in half, then pounded them out thin and even, then seasoned the breasts lightly with poultry seasoning (rather than salt), added the sage and proscuitto and cooked as directed (definitely 2 minutes per side the way I prepared the cutlets). I doubled the sauce recipe and added a cup of white wine, reducing it by half. I served this with pesto orzo and spring peas and this was delightful. I cook Sunday family dinner for 5+ people every Sunday, and everyone loved this, most going back for seconds. The sauce was lemony and light and a nice accompaniment to the tanginess of the pesto and the freshness of the peas. I will DEFINITELY be adding this to my regular rotation for dinner!

Amazing! I couldn't believe how easy this was and how good it was! Definitely good enough to serve to company, but so quick it can be a week night meal. I've made it with garlic mashed potatoes, put the chicken on top and sauce for nice presentation and that lemon sauce just bursts with flavor. For a quick weeknight meal I've left out the fresh sage, just sprinkled some dry on the breasts and it still worked.

I made this last night for my BF. It was fabulous! I had a little trouble keeping the proscuitto together but the recipe was still easy to put together. The flavors were excellent! This is definitely a keeper!

I love this dish! I will keep it in my go to recipes file - it's super simple to make. Tonight I had it with green beans over Forbidden rice- I put the sauce over the whole thing and loved it. My chicken took much longer than 2 minutes on each side so not sure how thin the cutlets are for the recipe posted above. This recipe is good enough for every day and for guests.

DELISH!! I followed the recipe as written. It was very simple to prepare, flavorful with just enough sage without overpowering, BUT I am not so much a sage fan, so I used the smallest sage leaves off the bunch :) The lemon-chicken broth roux is just the right amount of lemon, it doesn't overpower either. For sides, I seasoned green beans with pepper,garlic, and butter(smart balance), and served left over brocolli-rice casserole, from the night before :) and hot croissants with butter(smart balance). My sixteen year old son, LOVED it and to my surprise even ate the sage leaves!!! I will cook this again for certain!

This was very easy compared to my usual lemon chicken recipe. The only change I made was to add about a half a cup of white wine to the pan after browning the chicken and before adding the sauce ingredients. I was leery about whether the chicken would brown with the proscuitto on it, and if the proscuitto would get too crispy, but it was very simple and elegant.

made this last night and it was a HUGE hit. very light and a great alternative to heavy cream/butter sauce! I used 1 cup of broth, and squeezed in one lemon. I don't think it was entirely the full 1/4 cup but it was PERFECT... to anyone who said the lemon was overpowering, try that in the future!

I love ordering Chicken Saltimbocca when we are at Buca Di Beppo, but I know it's pretty fattening (due to the cream and butter). This recipe looks like it will be a lot less fattening! Do a google search for the recipe and Buca Di Beppo to see their recipe...they also add white wine, capers and artichokes which may tone down the lemon...

Very quick, easy, and delicious, but still impressed dinner guests with great presentation. Similar to other reviewers I also about doubled the broth as the lemon was a little overpowering. Served with plain spaghetti and asparagus! Will definitely make again.

We loved this! I had to substitute flour to thicken the sauce b/c I forgot the cornstarch. I also 4x the sauce and found it too lemony so added broth. I happened to be drinking a white wine and tossed some in for good measure, but I will be making this one again!

Incredibly easy dish but I wish there were better flavors there. As is, the lemon is really strong and without it the prosciutto overpowers any flavor in the chicken. I was a little let down about it considering the price of prosciutto.

Loved this! Very quick and easy. Started throwing it together at 8:40 and I finished and ate by 9:05. I love lemon so I don't think the flavor was too overpowering, but I can see how some people would. Maybe add more chicken stock if you're not a huge fan of lemon. I also doubled the sauce ingredients and had just enough. The stated quantities definitely wouldn't have been enough for me. Definitely don't salt the chicken first either. I just seasoned the chicken with pepper and garlic powder. I also used 1/4 lb of prosciutto instead of the 2oz. Just wasn't enough! Will definitely be making this again since, other than the prosciutto, I usually have all the ingredients on hand.

Thought this was amazing! I mixed some goat cheese/olive oil in the angel hair pasta and served the chicken on top. I reduced the lemon and added a little garlic. It came out really tasty.

Very good. Could be a quick solution to dinner guests. Reading some of the reviews, Cannot recommend salting first. Why add sodium with the prosciutto. Also, try turkey bacon instead of prosciutto.

Delicious and easy; the lemon & sage went nicely together. The only thing I did different was add a little salt to the sauce it seem to enhance the lemon. I served with angel hair pasta and steamed broccoli.

VERY delicious. We didn't have prosciutto, so we used thinly sliced Virginia Ham, which was OK, but prosciutto would have worked better. Still, it was delicious. I had never eaten whole fresh sage leaves before, and the balance of flavors was perfect.

I made this tonight and my husband and I loved it! He said to hang onto that recipe! We served it with noodles just like the picture. I added extra broth because I thought it was a little too lemony for us, and reduced it to the consistency we wanted. It was excellent!

This was simply delish. I did revise it a little by starting the chicken in the pan and then finishing it off in the oven on a cookie sheet. ALso had to use a little more cornstarch than called for to get the sauce to thicken up. But, it was SOOOOOO GOOOOD!!!!

This had a nice tang and pretty presentation. I made this tonight for my husband and I. He does not like lemon but loved this dish! The chicken needs more than 2 mins/side to cook through. Sauce really amps up the flavor! Served with sauteed cubed potatoes and leeks. Will definitely make again.

I cut my breasts in half so they would cook faster. . .and they still took much longer to cook than what was recommended. I felt the sauce had a little too much of a burnt flavor from the "bits" in the bottom of the pan. Next time, I will make the sauce in a clean pan.

Really a nice flavored dish. I'm not a huge fan of chicken breast in general as it tends to be a bit dry but now anytime I make it I pound them out. This recipe works really well with that. A definate save!

Wow, I think all the prior reviewers have said just about all I would say; forgot to salt the chicken first, but glad I didn't due to the salty prosciutto. Other than that, I followed the recipe exactly and it was divine! Plus, loved that I got home late after a stressful day and was so easily and quickly able to throw together such an impressive meal. I'm on as low carb kick, so served it with sauteed spinach, but would LOVE to try it with angel hair next time. YUM!

Wow! Absolutely fabulous. Delicious, simple to prepare, and few ingredients. Perfect presentation for a special occasion, yet perfect for a quick <30 minute week night meal. Next time, I will not add the salt, as you get plenty of salt from the proscuitto. I also added 1 tablespoon of capers. Perfect. A+, 5 out of 5 stars!!!

WOW! I am new at cooking, never really enjoyed it... but this recipe makes all the hard work worth it (and it's really not very hard!) This was delicious. I will definately use this for company. Easy, yet beautiful presentation. I substituted white cooking wine for the chicken broth and it made a very strong sauce that went well with a lemon pasta dish from weight watchers. The sauce also paired well with broccoli.

I LOVE this!! I love the chicken/proscuitto combo and have tried it a number of ways, but this was by far the easiest recipe! Must be the lemony sauce that makes the difference! Even though it's easy to make, it looks elegant and tastes amazing. Served with lemony broccolini (also CL). I like the reviewer's idea of adding capers...may do that next time.

Beautiful presentation! Easy recipe but not 20 minutes total. A bit too much lemon tartness. I cut it down with more chicken broth. Even though ny husband hates lemon...he enjoyed it.

This recipe rocks! I did follow another reviewer's tip and didn't salt the chicken before wrapping prosciutto and sage around it, and I thought it was seasoned perfectly. I also made extra sauce than the recipe called for to go over the pasta and the chicken. I served this dish with angel hair pasta and peas.

Easy recipe that tastes anything but light. I have made this twice. The first time I didn't have sage leaves, but sprinkled chicken with poultry seasoning instead. I served this with cooked spinach (4 c. spinach, 2 cloves of chopped garlic, dried onions and a little pepper). Suggestions for this recipe: (1) Pound the chicken out a little so that it is an even thickness. (2) Don't salt the chicken breasts, there is enough salt from the Proscuitto. (3)Double the lemon/broth sauce.

Based on the previous reviews & because my husband isnt fond of too much lemon, I went with half white wine (chardonnay) & half lemon for my sauce. It didnt have that "pop" others said, but the chicken was tasty. I served it with angel hair pasta & the sauteed spinach in the same issue of CL. Good weeknight recipe. Quick & easy.

This dish is soooo delicious! The lemon sauce just pops. Very easy to make, which is a bonus. I added some capers to the sauce right before serving which added a nice salty bite! Will definitely make this again!

My ten-year-old son and I chose this out of the magazine to make for dinner tonight, and it was a hit! Easy to make, but with lost of learning opportunities for the boy. Great flavor - full, but not too rich, with just the right amount of acidity for a good pop of flavor from the sauce.

Wow, we loved this recipe! I doubled the sauce like some other viewers recommended and added a little butter to it. Otherwise I followed the directions. My family usually doesn't enjoy chicken breast but this stayed moist because of the prosciutto and the fresh sage provided lots of flavor. Definitely a keeper...

The flavors of this dish are undeniably delicious--but I switched the amounts of oil. I cooked the chicken in a teaspoon, and added a tablespoon to the sauce. Too much oil keeps the chicken from browning. Otherwise, divine! I served this with pasta and a spinach salad with balsamic vinaigrette.

How fun to see that two other cooks served this for dinner last night, as I did. Recipe worked great, looked great, tasted great. I too served it with Angel Hair. I simply doubled the chicken stock to be sure to have enough moisture for the pasta. I also added a bit of butter to the sauce. Really delicious. This would be an easy and impressive dinner for company.

The chicken was delicious, and the presentation was great. I served linguine on the side. The sauce however, was too lemony and needs some additional flavor. I'll try it again probably making a caper or fresh mushroom sauce (rather than dried mushrooms, that might overpower the chicken) with a bit less lemon.

Made this tonight and thought it was great! I served it over angel hair pasta with a side of broccollini. I would make this again for sure. My pasta wasn't quite done when the sauce was, so I poured the sauce off into a bowl so it wouldn't overcook, and then when the pasta was done I drained it and then threw it back in the pan I had cooked the chicken in to soak up the last bits of sauce. The only thing I did different was add a pat of butter to the pasta at this point.

Quick, easy, and delicious. Light and lemony. Very nice supper dish. Cooked longer than 2 minutes per side and used thin cutlets. Served with broccoli and angel hair pasta. Wonder if the pasta could be spiced-up somehow. I will be interested to read further reviews.
